Meet Our Restaurant Team

Colin Ruffles

Head Chef

Colin has been in catering all his life.


Before joining us he was Head Chef at a Michelin listed restaurant.


Colin creates delicious dishes incorporating local produce and  the abundance of vegetables and fruit grown in the gardens.

Sammy-Jo Arnold

Counter Manager

Sammy has worked in the industry all of her working career. 


Sammy joined us from the National Trust and when she's not baking ensures the smooth running of our restaurant.

Adrian Harland

Customer Service

Adrian has been in catering all his life. He has worked abroad but has worked extensively in the area.


Adrian can be seen most days behind the counter producing barista coffee and serving our homemade cakes.

Sylvie Fielden-Nicholson 

Customer Service

Sylvie has worked locally most out of her life primarily in sales.


Sylvie always ensures we  provide exceptional customer service and supports coach groups when she's not helping behind the counter.
